Jeff Osaka on the Success and Expansion of his Restaurant Empire
Jeff Osaka on the Success and Expansion of his Restaurant Empire The restaurant industry is a notoriously laborious and difficult business to break into. But with seven (soon to be eight) restaurants across the Denver-metro region, Chef Jeff Osaka and business partner and real estate developer Ken Wolf have seemingly found success in this fickle industry, even if Osaka doesn’t see it that way. “I don’t think we’re successful yet, we have a lot of restaurants and they’re slowly becoming profitable. It takes some time,” Osaka says. “A lot of it is marketing. Right [...]
Local Restaurants that Kids Love to Visit
12 Local Restaurants That Kids Love to Visit The Scene: A conveyor belt transports grab-and-eat food options throughout a mid-mod inspired sushi-go-round restaurant. Not a typical order-at-the-table experience, families dining at one of the four Sushi-rama locations pick favorite sushi rolls on color-coded plates—all under $4—as they roll by on a high-tech conveyor belt. That means less waiting to get hungry kids that first bite. Futuristic technology like microchipped plates ensure freshness by tracking the time each piece has been on the belt, and a “sushi printer” continuously lays perfect sheets of rice on [...]
Vegan Sushi Recipes So Good, You Won’t Miss Fish
Vegan Sushi Recipes So Good, You Won't Miss Fish First: good rice. You can’t hide bad rice in plant-based sushi, Lee says. If you’re not confident about your rolling abilities, don’t stress. Both of these can be made chirashi style. Chirashi just means “scattered,” says Shaun Motoda, the sushi chef at Denver’s Sushi-Rama. Instead of rolling everything up, you’ll just make a rice bowl with all the goodies piled on top. But if you want to roll yourself a fat one, well, we won’t stand in your way. Next: think about texture. Try to build something [...]
Robots in Restaurant Kitchens
Robots in Restaurant Kitchens On the other hand, implementation of two members of AUTEC's family of sushi robots at the Sushi-Rama restaurant chain in the Denver area reportedly went off without a hitch. Jeff Osaka, chef and owner of the five restaurants and his team of about 20 human employees have been working with the Maki Maker and Nigiri Maker robots for the past three and a half years. In contrast to mobile robots, AUTEC's restaurant robots are stationary. They sit where they are on a conveyor belt, uncomplainingly carrying out their preprogrammed assignments alongside people. "The [...]

Sushi-Rama expansion into Aurora could drive commercial growth
Sushi-Rama expansion into Aurora could drive commercial growth Osaka surveyed the sushi conveyor belt snaking through his newest restaurant last week. The sleek, silver train wasn’t yet moving colorful plates of sushi and nigiri to patrons, and through the windows, sparse foot traffic on East Colfax Avenue passed in front of the Veterans Affairs Medical Center on North Wheeling Street. Local City of Aurora officials says Osaka’s decision to open his next Sushi-Rama location — a trendy local chain centered on conveyor-belt-delivered sushi — could be a driver of local economic growth when it [...]

The team, which just opened a third location in Lone Tree, gets a little help from 410 Nigiri and 865 Maki, rice printing machines. “We pour in prepared sushi rice and, for sushi roll sheets, it’s separated and pressed evenly by rollers into a mold,” Osaka says. The 865 Maki can make 1,300 sheets an hour that are slightly warmed—the ideal temperature, Osaka says. [...]

Sushi-Rama Adds Commercial Kitchen to Handle Rapid Growth
Sushi-Rama Adds Commercial Kitchen to Handle Rapid Growth Chef/restaurateur Jeff Osaka launched Sushi-Rama at 2615 Larimer Street in late 2015, introducing conveyor-belt sushi to Denver. Osaka's goal at the time was to add multiple sushi bars throughout the metro area and eventually expand beyond Colorado. The semi-automated production and delivery of sushi was intended as both a way to keep the price down for customers and to streamline hiring and training internally. With two new Sushi-Rama outposts already open this year and two more on the way, the company is looking at new ways to become [...]
Denver restaurateur Jeff Osaka growing conveyor-belt sushi concept in Colorado and beyond
Denver restaurateur Jeff Osaka growing conveyor-belt sushi concept in Colorado and beyond Less than three miles from his bustling original Sushi-Rama restaurant, but seemingly a world away, Jeff Osaka is building plans to grow the concept up and down the Front Range and into other states — from a 3,020-square-foot warehouse that will be the nerve-center of his fresh-fish distribution throughout the region. The longtime Denver chef — who helmed the now-shuttered Twelve but still operates Osaka Ramen and 12th & Madison — opened Sushi-Rama in December 2015 in the River North neighborhood as an ode [...]

Design Alert: RiNo’s Sushi Rama
Design Alert: RiNo’s Sushi Rama When chef Jeff Osaka set about concepting Sushi-Rama, his year-old RiNo hot spot, he wasn’t going for the minimalist, Zen vibe of most sushi shops. Instead, he and business partner Ken Wolf asked Denver-based LIV Studio to explore the modular look of the ’60s. They provided two key inspiration points—Austin Powers and Hollywood’s Cinerama Dome—before turning the design firm loose. “We kept it pretty vague,” Osaka says. “We wanted colorful and fun, and they went for it.” Principal designer Brandon Anderson dove into the kitschy history of “kaiten”-style (conveyor-belt) dining in late-1950s Japan and [...]

The House Smoked Ribs at Sushi-Rama are Worth the Wait
The House Smoked Ribs at Sushi-Rama are Worth the Wait "Kaiten zushi" is Japanese for "rotation sushi." The house-smoked ribs are on that menu. "With this kind of restaurant, you can sit down and have food [...]

At Denver’s Sushi-Rama, a novel way to bring plates to the table If it feels like the kitchen at Sushi-Rama is turning out its artful seafood plates on a conveyor belt, well, it’s because it is. Literally. This is Japanese fare that Henry Ford would approve. Chef-owner Jeff Osaka, who also owns two Osaka Ramen noodle shops in Denver, was inspired by the fast-food conveyor setups in Japan. In this small and shiny room at 2615 Larimer St., the crew assembles sushi rolls, sashimi and nigiri in the semi-open kitchen, arranges it on ceramic plates that are [...]

Kaitenzushi restaurants can be found throughout Japan and are essentially the Japanese equivalent to fast food, where guests can enjoy quality sushi without the time and expense associated with a full-service restaurant. In the U.S., some consider conveyor belt sushi gimmicky and people fear that the fish may not always be fresh. Osaka’s [...]
